Slow cooking raw vegetables gently extracts their vitamins, minerals, and natural flavor using ingredients you can trust. 

It’s simple, hands-off, and endlessly versatile. Just toss everything in a pot, simmer, strain, and glow from the inside out.

Ingredients
2 onions, halved 
2–3 garlic cloves, halved 
3–4 carrots, roughly chopped
3–4 celery stalks, roughly chopped
1–2 leek tops, roughly chopped (optional)
1–2 bay leaves
1 bunch of parsley
10–12 cups water
10 peppercorns
2 tbsp salt to taste

Instructions
1. Cut the garlic and onions in half. Roughly chop all other vegetables.
2. Place everything into a large stockpot and cover with water.
3. Bring to a boil over high heat.
4. Reduce the heat and simmer gently for 1 hour.
5. Strain and discard the vegetables.
6. Season with salt to taste.
7. Allow to cool, then store in airtight jars or containers.

Storage
Fridge: up to 1 week • Freezer: up to 12 months
